In large pan, sprayed with Pam, sauté carrot, onion, and garlic over low heat until softened, about 5 minutes. Add broth and all other ingredients and bring to a boil. Lower heat and simmer, covered, about 15 minutes. Instructions:
Melt the butter in a cookie sheet or 9x13 pan. In a large bowl beat the egg white and water until foamy. Add pecans and stir until coated. Mix the sugar, cinnamon, nutmeg, and salt and sprinkle over pecans and stir until coated. Spread in pan or cookie sheet and bake at 300 degrees for 40 minutes. Stir twice during baking. Instructions:

Toss the walnuts in the 1 tablespoon of walnut oil and sprinkle with salt and pepper. Spread them on a baking sheet and bake at 350 degrees for 5 minutes. Let cool. Make dressing with the cider vinegar, mustard, and walnut oil. Arrange lettuce on 4 places. Sprinkle walnuts and blue cheese on top and add dressing. Serve at once. |
