Dice and marinate chicken in 1 tbsp of Cajun seasoning for an hour minimum in the refrigerator. Sauté chicken in vegetable oil until done. Sauté mushrooms in butter or vegetable oil until done. Mix whipping cream and 1 tbsp Cajun seasoning in large pot or crockpot until hot. Then add tomatoes, mushrooms and onions and keep on low heat. Cook pasta according to package instructions. Then add pasta and chicken to sauce. Mix well. Sprinkle parmesan cheese on top when serving. Can add more Cajun seasoning for spicier taste. Instructions:
Put noodles in 9 x 13 pan and soak with water while browning beef. Brown beef and drain grease. Add marinara sauce and mix well. Mix the cottage cheese with the egg and salt and pepper to taste. Spray 9 x 13 pan with Pam. Layer 4 noodles on bottom of pan. Layer with half of the beef, then half of the mozzarella cheese and the cottage cheese mixture. Sprinkle with parmesan cheese. Repeat with the remaining half. Bake at 375 degrees for 35-40 minutes. |
